The story of Domaine des 15 Lots is written in the snow-dusted peaks of the Appalachian Mountains and steeped in the sweet, wood-smoked vapour of a sugar shack built in 1989. It began with Lise and Gérald Simoneau tapping the land that once belonged to Grandpa Simoneau, often boiling sap through the night on a wood stove. Today, that same steadfast stove hums at the heart of an operation led by their children—a beautiful fusion of deep tradition and culinary artistry.


At the forefront is Nathalie, a pastry chef honed in the kitchens of Sofitel and Laurie Raphaël, who returned to her roots with a mission. She saw the unique, unblended character of her family’s daily syrup—a flavour that changes with the thawing earth—and knew it was something special. Under her guidance, the harvest is a sustainable, all-hands-on-deck family affair, now including the grandchildren, ensuring the land will give for generations to come.


The result is more than just syrup; it’s a seasonal narrative in a bottle. From the delicate, vanilla-kissed Golden syrup of early spring to the robust, burnt-caramel Dark syrup of the season’s end, each batch is a singular capture of a specific day on the mountain. Nathalie’s pastry chef soul shines in her Montréal boutique-workshop, where this exceptional syrup transforms into elegant pastries and gourmet products.
